Boże Narodzenie to szczególny czas dla łasuchów. W końcu na stole pojawiają się potrawy, których często nie uraczycie przez pozostałe 11 miesięcy. Święta Bożego Narodzenia to bardzo charakterystyczne dania, którym większości kojarzą się właśnie z tym czasem. Choć oczywiście każda rodzina ma swoje ulubione potrawy i jedzeniowe tradycje – część z nich często się powtarza w zależności od kraju i regionu.

W Polsce na świątecznym stole nie brakuje zwykle ryby po grecku, barszczu czerwonego, pierogów czy makowca. Tradycyjnie w Wigilię na talerzach pojawia się ryba, rezygnuje się natomiast z dań mięsnych. Na te przychodzi pora w pierwszy i drugi dzień świąt.
Jakie potrawy mogą Was zainteresować?

Pierogi z kapustą i grzybami

Polskie pierogi z kapustą i grzybami to chyba najpopularniejsza potrawa na świątecznym stole. Teoretycznie słowo pierogi można przetłumaczyć na język angielski jako dumplings, ale nie jest to jednoznaczne i w angielskich przepisach często pojawia się po prostu polskie słówko. Poniżej przepis na Polish pierogi with mushroom & cabbage.

Ingredients:

  • 1 kg of the sauerkraut
  • 2-3 cups of dried mushrooms or much more raw white mushrooms from grocery
  • 2 medium-sized onions
  • oil or butter for frying onion
  • some salt
  • some black pepper
  • 8-10 bay leafs
  • spoonful of breadcrumbs (optional)

Recipe:

  1. Rinse dried mushrooms with cold water and throw into the pot with hot water. Leave for 15-20 minutes.
  2. Put the pot on the cooker and cook mushrooms, until become soft.
  3. Drain mushrooms off on the colander. Collect water in the second pot.
  4. Throw the sauerkraut into water, in which mushrooms were cooked. Cook it, until become soft.
  5. In the meantime cut mushrooms carefully into small stripes.
  6. Drain the cabbage off on the sieve. You can pour water out. Carefully shred the cabbage into small stripes.
  7. Peel two medium-sized onions and cut into small dices.
  8. Melt some butter or oil on the frying pan.
  9. Throw onion to hot butter / oil and fry about 5 minutes to achieve delicate browning.
  10. Next throw the cabbage and mushrooms. Mix precisely.
  11. Add the salt and grinded black pepper to the taste. Add 8-10 bay leafs. Some Poles add a tablespoon of breadcrumbs, but it is not compulsory and I, personally, have never tried it.
  12. Put a lid on the frying pan and stew about 10 minutes.
  13. Put the filling to the bowl and let it cool off. The filling is ready to go when cooled but you will need to get rid of bay leafs before folding pierogi.

Ryba po grecku, czyli Fish in the Greek Style

Kolejne danie, które gości na wielu polskich stołach. Potrawę można podawać na ciepło lub na zimno. Składa się ze smażonych kawałków lub filetów rybnych w sosie warzywnym. Jak przygotować rybę po grecku?

Ingredients

For the Fish:

  • 1 pound white fish fillets (tilapia, perch, pike, walleye, etc.)
  • A few dashes salt and black pepper
  • 1/2 cup all-purpose flour
  • 2 tablespoons oil (for frying)

For the Vegetables:

  • 2 tablespoons oil
  • 2 large carrots (peeled and coarsely grated)
  • 1 rib celery (coarsely grated)
  • 1 parsnip (peeled and coarsely grated)
  • 6 whole allspice
  • 1 large leek (white and part of the green end, rinsed of all grit and sliced)
  • 1 bay leaf
  • 4 tablespoons tomato paste (or more to taste)
  • Salt and black pepper to taste

Recipe:

  1. Rinse and pat fish fillet dry. Season with salt and pepper. Dredge in flour and sauté in oil until golden brown and cooked through. Remove from pan and drain on paper towels. Set aside.
  2. Meanwhile, heat a large skillet over medium and add 2 tablespoons oil. Add carrots, celery, parsnip, leek, and sauté until vegetables have collapsed, stirring frequently. Add allspice, bay leaf, and tomato paste. Mix well and simmer until vegetables are tender, stirring occasionally, and most of the liquid has evaporated. Remove the bay leaf and allspice. Season to taste with salt and pepper.
  3. Place 1/3 of the tomato-vegetable mixture on a serving platter. Lay the fried fish on top. Cover completely with the remaining tomato-vegetable mixture. Serve hot or cold.

Pieczony indyk, czyli roast turkey

Pieczony indyk to najpopularniejsza potrawa na świątecznym stole w Anglii. Towarzyszą mu gęste sosy i żurawina, a także pieczone warzywa (jak właśnie ziemniaki, brukselka czy pietruszka). Jak zrobić to danie?

Ingredients:

  • 1 (18 pound) whole turkey
  • ½ cup unsalted butter, softened
  • salt and freshly ground black pepper to taste
  • 1 ½ quarts turkey stock
  • 8 cups prepared stuffing
Pieczony indyk - roast turkey

Recipe:

  1. Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
  2. Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.
  3. Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 165 degrees F (75 degrees C), about 4 hours.
  4. Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.

Parówki w cieście – tak zwane Pigs in Blankets

Kolejne popularne danie w Anglii to Pigs in Blankets. To parówki lub małe kiełbaski zapiekane w cieście. W wersji podstawowej potrawa składa się tylko z tych dwóch składników. Istnieje oczywiście wiele wariacji, dziś pokazujemy Wam przepis z mini kiełbaskami, serem i boczkiem. 


Ingredients:

  • 12 mini sausages
  • 6 rashers bacon
  • 1 cup grated mozzarella cheese (100 g)
  • 1 sheet puff pastry
  • egg wash, as needed
  • 2 tablespoons black onion seed, to taste

Recipe:

  1. Cut the rashers in half lengthwise, and roll the sausages in them. Set aside.
  2. Preheat the oven to 180˚C (350˚F).
  3. Lay out the sheet of puff pastry and coat with some egg wash.
  4. Cut into 12 squares.
  5. In each square, sprinkle on some cheese, followed by a sausage wrapped in bacon.
  6. Roll in the pastry. Pierce some holes on top of each roll and coat with more egg wash. Top with black onion seeds.
  7. Bake for 20 minutes, or until golden brown and the sausages are cooked through.
